Windlestraw, AA Rosette Winner
The motion
That the Parliament congratulates Windlestraw, which is a hotel and restaurant in Walkerburn, on winning its third AA rosette for culinary excellence; understands that this award denotes restaurants that deserve recognition beyond their local area for their adept use of high-quality ingredients and consistently excellent flavour combinations; notes that the hotel’s owners, John and Sylvia Matthews, credit the award to their head chef, Stuart Waterton, and his hard work and use of locally-sourced ingredients; recognises that John and Sylvia hope that the award will attract tourists to visit the Borders, and wishes them all the best for the future.
