Restaurant Andrew Fairlie at Gleneagles Two Michelin Stars 2023
The motion
That the Parliament congratulates Restaurant Andrew Fairlie at Gleneagles for retaining its status as a two Michelin star restaurant for 2023, which was announced at the Michelin Guide Ceremony on 27 March 2023; understands that Restaurant Andrew Fairlie is Scotland’s only two star eatery and this is the 18th consecutive year that it has been awarded two star status; notes the Michelin Guide verdict that “an oil painting of the late Andrew Fairlie takes pride of place on one wall and Head Chef, Stephen McLaughlin and his team work to continue Andrew’s philosophy and keep his spirit alive", that "Refined cooking has a French heart and a Scottish soul and, while techniques are rooted in the classics, there are also touches of modernity", that "superb quality produce guides the menu, with 95% of the vegetables coming from their walled Victorian garden and each dish focusing on one main ingredient which is then skilfully enhanced by its accompaniments", and that "Service is formal but comes with plenty of personality”; commends Head Chef, Stephen McLaughlin, Restaurant Manager, Dale Dewsbury and their teams for this latest recognition, and wishes all involved continued success for the future.
