Heron Restaurant, Leith, Michelin Star
The motion
The Parliament congratulations Heron restaurant in Leith on being awarded a Michelin star for the first time, in March 2023; notes that the restaurant is located at 87-91a Henderson Street and is led by Sam Yorke and Tomás Gormley, two talented head chefs; recognises that, aged 25 and 28 years old, Sam Yorke and Tomás Gormley are the youngest chefs in Scotland to receive a Michelin star for their restaurant; appreciates that, since opening in 2021, Heron offers farm to table fine dining, showcasing the best of Scotland’s seasonal produce, and wishes the whole team at Heron restaurant every success for the future.
